hilltop town of Langhirano, just outside of Parma. The
superb quality is due to the unique use of very large legs,
very low salt content and perfect fat ratio; those that
demonstrate refined texture, balanced marbling and
unparalleled sweetness. Academia Barilla’s prestigious
salami are from the ONLY USDA certified producer in Italy,
these are the only real Italian salami available in the United

Academia Barilla exclusively selects only rare hillside milk
from the foothills of the Apennine Mountains for its precious
Parmigiano Reggiano. Here, cows graze on wild herbs, grasses
and bushes, unlike the more typical forage of common hay.
The result is the perfect table cheese! Academia Barilla’s
Pecorino cheeses are produced in the two most important
sheep herding regions of Italy, Sardinia and Tuscany. They
have the longest and most distinguished traditions and
experience with sheep milk. The three varieties include a
mild and young Pecorino Dolce, a sweet and sophisticated
Pecorino Gran Cru, and a grassy and aromatic Pecorino
Toscano DOP.
